Description
This knife takes its shape from the Basque knives used by the peasants of the Basque Country in the 1890s. It was reintroduced in Spain and France in 1939 by the Aitor brand, which manufactured it in Ermua, Biscay, in the south of the Basque Country.
Today, we manufacture them in the Basque workshop of Couteau, in Anglet, on the banks of the Adour river.
Yataghan-shaped blade. Handle tipped with cow horn. Square locking system. Stainless steel blade 12C27. Guillochage on the blade with 7 “S” representing the 7 Basque provinces.

Dimensions: length of the closed knife: 100 mm. Length of the open knife: 190 mm.
