Description
This knife takes its shape from the Basque knives used by farmers in the Basque Country in the 1890s. It was reintroduced in Spain and France in 1939 by the Aitor brand, which made it in Ermua, Vizcaya in the southern Basque Country.
Today, we make them at the Couteau Basque workshop in Anglet on the banks of the Adour river.
Yatagan-shaped blade. Saint Jean de Luz olive wood handle. Square lock system. 12C27 stainless steel blade. Guillochage on blade with 7 “S” representing the 7 Basque provinces.
