El cuchillo más antiguo utilizado en el País Vasco fue el cuchillo de pastor. Ya se encontraba en nuestras montañas pirenaicas en el siglo XII. El Couteau de Berger (Cuchillo de pastor), un cuchillo sencillo, casi siempre de cuerno de oveja o de madera, tenía una hoja en forma de hoja de salvia con un sistema de fricción conocido como sistema de dos uñas. Un pasador para permitir el giro de la hoja y un tope para detenerla en posición abierta.

Cuchillo de pastor del sur del País Vasco, presenta una hoja ancha y panzuda decorada con una cruz vasca. Ya en el siglo XVII, su mango se fabricaba con cuernos locales, como los de carneros y ovejas de cabeza negra. Es una navaja plegable que utiliza el llamado sistema de dos uñas y es sorprendentemente ligera.

Encontrado pintado en el dintel de una casa del pueblo de Irissarry. Francisco de Aguerre, que lo fabricó en el siglo XVII, era cuchillero y barbero. Su hoja se asemeja a la de la navaja española, esbelta y con la punta curvada. El mango es de cuerno rubio, cuerno negro o madera. Las fabricamos en nuestro taller con un sistema de virola giratoria o con un sistema de muelle de muesca cuadrada.

De Cambo les bains, toma la forma de la estela discoidal que se encuentra en el País Vasco desde el siglo XI. Esta navaja plegable, que data de 1722, lleva grabados varios símbolos, como la famosa cruz vasca (Lauburu) dibujada en las fachadas de las casas blancas. El mango puede ser de madera, de cuerno negro o rubio, o de cuerno de oveja vasca. Las fabricamos en nuestro taller utilizando un sistema de dos uñas o un sistema de muelle de cuadradillo.

Data de finales del siglo XIX. Fue fabricado en el pueblo de Espelette hasta 1871 por el cuchillero Pierre Dufourcq. Nuestro taller lo ha desenterrado del pasado y lo sigue fabricando hoy en día en el País Vasco. El mango puede ser de varias maderas, cuerno rubio o cuerno negro. La hoja, de acero al carbono forjado o de acero inoxidable, lleva grabadas 7 «S» que representan las siete provincias vascas.
