L’atelier, bordé par le petit canal Atchinetche, est installé en face du fleuve l’Adour à la frontière d’Anglet et de Bayonne. Cet ancien bâtiment, situé dans la zone artisanale de Jorlis, abritait dans les années 1930 une forge de chaudronnier.

Séverine et Christophe y réalisent des couteaux traditionnels pyrénéens et basques dits à deux clous. Ils fabriquent les manches en cornes et en bois du Pays. Les deux artisans se servent aussi de matières exotiques comme le bois de serpent et l’ivoire de mammouth.
Les lames en acier carbone, ainsi que les lames damas sont forgées à la main à l’atelier et les lames inoxydable préparées à Thiers en Puy-de-Dôme, capitale de la coutellerie.

Ces deux couteliers, Artisans d’Art, fabriquent plusieurs modèles : Le Couteau de berger dont le contour de la lame est issu des ciseaux à tondre la laine, le Couteau Basque dont la forme datant de 1722 évoque une stèle discoïdale, le Couteau Makila, reprenant l’élégance du bâton des basques, le couteau d’Espelette datant de 1871… Tous sont gravés d’un symbole : la croix basque (Lauburu) ou d’emblèmes basques anciens. Chaque couteau est façonné et assemblé avec soin et passion, ce qui lui donne un caractère unique.
