Made until 1871 by Espelette cutler Pierre Dufourcq, this table knife features a “sage leaf” blade, one of the oldest shapes in the Pyrenees.

The Basque word for Espelette is Ezpeleta, meaning “place planted with boxwood”. The village of Espelette is famous mainly for its pimento. It can be found on every street corner and on the facades of houses.

The bumpy handle of this Espelette knife was used to house a veterinary spike (called a “flamme”) for piercing animal abscesses. We now make this knife without the tip.
