Le plus ancien couteau utilisé au pays basque était celui de berger. On le trouvait déjà dans nos montagnes pyrénéennes au 12ème siècle. Couteau simple, le plus souvent en corne d’ovidés ou en bois, le Couteau de Berger possédait une lame de forme feuille de sauge avec un système à friction, dit à deux clous. Un axe pour que la lame puisse pivoter et une butée pour l’arrêter en position ouverte.

Couteau de berger du pays basque sud, possède une large lame ventrue ornée d’une croix basque. Dès le 17ème siècle son manche était façonné dans les cornes locales, de bélier, de brebis à tête noire. Couteau pliant utilisant le système dit à deux clous, il surprend par sa légèreté.

A été retrouvé peint sur le linteau d’une maison dans le village d’Irissarry. Francisco de Aguerre, qui le fabriquait au 17ème siècle, était coutelier et barbier. Sa lame ressemble à celle de la navaja espagnole, élancée, à la pointe recourbée. Son manche est habillé de corne blonde, de corne noire ou de bois. Nous le fabriquons à l’atelier avec un système à virole tournante ou un système à ressort à cran carré.

De Cambo les bains, reprend la forme de la stèle discoïdale que l’on retrouve au pays basque depuis le 11ème siècle. Ce couteau pliant, datant de 1722, est gravé de différents symboles, comme la fameuse croix basque (Lauburu) dessinée sur les façades des maisons blanches. Date de la fin du 19ème siècle. Il était fabriqué dans le village d’Espelette jusqu’en 1871 par le coutelier Pierre Dufourcq. Notre atelier l’a exhumé du passé et le réalise encore aujourd’hui au pays basque. Son manche peut être en bois divers, corne blonde ou corne noire. Sa lame, en acier carbone forgé ou en acier inoxydable, est ciselée de 7 « S » représentant les sept provinces basques.
