Saviez-vous que des couteliers avaient œuvré au pays basque depuis le XIIIème siècle ?
Les maîtres couteliers de Bayonne, ont été affiliés pendant plusieurs siècles à la corporation des Faures (forgerons en gascon), une des trois plus importantes corporations de la ville.

En 1693, ils demandèrent le droit de créer la corporation des couteliers, ce qui leur fut accordé (d’autres sources datent cette création en 1712). Les couteliers bayonnais, dont les ateliers étaient installés dans la rue des Faures, avaient aux XIVème et XVème siècles une très grande réputation, surtout pour leurs canifs et tranche plumes mentionnés dans des inventaires de la Noblesse (Henri II, Guillaume de Montmorency). Au XVIIème siècle, l’un d’eux, Pierre de Lesseps, fit pendant quinze ans son Tour de France. Mais ils connurent leur heure de gloire avec l’invention, au XVIème siècle, de la baïonnette, arme qui fut d’abord nommée « couteau bayonnais ». Le régiment des fusiliers, sous Louis XIV, fut le premier à être armé de ces baïonnettes. Suite à un édit de 1696, obligeant dans un but fiscal, les particuliers, les groupements, corporations et villes à déclarer et faire enregistrer leur blason, Bayonne, n’ayant rempli aucune formalité, s’est vu octroyer d’office, par ordonnance de février 1700, « l’écu de sable noir à une baïonnette d’argent en pal, la poignée d’or, la garde d’argent, aiguisée en pointe ». Les Bayonnais paieront 100 livres pour l’enregistrement de ces armoiries mais ne les utiliseront jamais.
